It is that time of year again where many people will start up gardening. Gardening is a great way to save money on your favorite vegetables and get a great deal of exercise in as well. Additionally, did you know that gardening actually helps the environment? Growing your own vegetables helps reduce carbon emissions. So what are we waiting for? Let’s get growing!

Tips & Tricks on Gardening Favorites

We picked out three commonly grown vegetables and provided some tips and tricks on how to succeed this gardening season. Find out how below!

Tomatoes:

  1. Tomatoes, like people, love the sunshine! Make sure that your tomatoes are in a position where they will get ample sunshine to grow strong.
  2. Tomato plants can be planted a lot deeper than other vegetables. A full two-thirds of the plant should be underground. Seeds should be planted one-eighth of an inch underground. By planting tomatoes deeper in the soil, you are allowing for stronger, more resilient roots. 
  3. Tomato plants need 1-2 inches of water in total per week. Remember not to do this all at once.

Peppers:

  1. Unlike tomatoes, peppers must be in a shaded area, as they are very sensitive to heat.
  2. Peppers require 1-2 inches of water per week, but make sure to space out your waterings. Peppers need days in between for dryness. Slow dousings of water are beneficial for peppers.
  3. Plant peppers 18-24 inches apart.

Carrots:

  1. Carrots require a lot of sunshine – about 6-10 hours a day.
  2. Carrots are slow to germinate. They typically require 2-3 weeks to emerge, so don’t give up on these guys!
  3. Water carrots frequently, but do not douse them as you would with peppers. A shallow watering will do.

As you start harvesting your crops, you will want to make some homemade meals out of them. Check out some of our recipes below!

The best way to lower your impact on the planet and save on energy costs is to not use energy at all. You don’t need to unplug your oven, but many electronics use “phantom energy.” They quietly use power even as they sit idle. TVs, air fresheners, alarm clocks — every little bit makes a difference. Even a small appliance like a printer passively uses electricity while it’s plugged in. Try using surge protectors or power strips to make turning everything on and off a breeze.

Smart technology apps and electrical timers can come in handy when you’re away. If you’re worried about your plants getting proper hydration, or if there’s a pet keeping watch at home (or napping all day), create presets to keep them cool during the day and cozy at night. Check out smart thermostats and pre-programmed lights, too. As a safety precaution, you can also set a timer to turn on a few lights when you’re out, so it looks like someone’s at home.

Many of us clean out our refrigerators before we leave town. According to our cool friend science, refrigerators are more efficient when there are more items on the shelf, since cold items help keep other items cold. You can save a little on your bill and help the planet by letting your appliances work for you. If you have liquids or water that’ll keep until you get back home, feel free to leave them on the shelves so your fridge won’t have to work as hard while you’re gone.

This is a more advanced tip, since most of us don’t touch the water heater unless there’s a problem with it. It’s a huge appliance that uses a lot of energy to keep hot water ready for washing dishes and showering. But since you won’t need hot water while you’re gone, why not adjust the water heater for energy efficiency? Many water heater models have a vacation mode, but you can also turn it down manually. Once you return, make sure to follow the Energy.gov recommendations for powering up your water heater when you get home.

Everyone’s lifestyle is different, so no energy tip will be one-size-fits-all. Do what works best for your home, so you can kick back, relax and enjoy your vacation, all while knowing your home is on an energy-efficient staycation.

Meatball Slider Bake

1 lb. Market 32 Meatball/Meatloaf Mix

1/2 lb. Market 32 Deli Sliced Provolone

1 jar (24oz.) PICS Marinara Sauce

1 Yellow Onion

1 Seedless Cucumber

1 package Bakery Brioche Buns

Meatloaf

1 1/2 lbs. Market 32 Meatball/Meatloaf Mix

1 1/2 lbs. Sweet Potatoes

1 pouch PICS Beef Gravy

1 bag Pero Farms Green Beans

Meal 1: Easy, Cheesy Meatball Slider Bake and Cucumber Salad

A crisp, bright side salad brings crunch and zest to complement the savory, cheesy sliders. YES!

Essentials: 2 cutting boards, large, serrated knife, sheet pan, Simply Done Aluminum Foil, 2 Simply Done gallon storage bags, large bowl for salad, paring knife, vegetable peeler (optional) liquid measuring cup, meat thermometer

From the Pantry – 3 TBSP PICS Unsalted butter, melted; PICS White Vinegar, PICS Sugar, Italian Spice Blend

Food Safety notes: Wash hands before and after handling raw and cooked meat. Wash cucumber before slicing. Use separate cutting boards and knives for each food group.

Directions:

– Preheat oven to 350 degrees.

-Place 2 sheet pans on the counter, and cover with aluminum foil. Spray aluminum foil with PICS Vegetable Oil. Count the number of rolls in the package of rolls you are using, and plan to make the same number of meatballs. For this recipe, we will use 12 as the number of rolls and servings.

-Place 1 cutting board on the counter, and transfer meat from the package to the board. Flatten the meat slightly, and lightly score with a butter knife in a cross-section pattern to get to the # of sliders/servings you need.

  • For example, scoring 3 lines from left to right, and 4 from top to bottom should yield 12 even-ish portions that can be cut and rolled into meatballs. (Hack/optional – Use the 2 storage bags as “gloves” to make meatballs, (you can secure with a rubber band or chip clip) rolling them to your preferred size, and flattening slightly as you place them on one of the sheet pans. Put the meatballs in the oven to cook for about 20 minutes, or until an instant read thermometer says 145 degrees. Remove from the oven and place the pan on top of the stove, allowing it to cool for a few minutes.

-While the meatballs are cooking, remove the rolls from the package and cut in half, placing close together on the second sheet pan.

-Place a ½ slice of provolone on the rolls. They can touch or overlap slightly.

-Place the warm meatballs on top of the cheese. Spoon PICS Marinara onto each meatball, then sprinkle with Italian Seasoning.

-Place second piece of cheese on top of the sauce, and top with the rest of the sliced bun.

-Brush the tops of the sliders with melted butter, and sprinkle with additional Italian Seasoning.

-Cover with foil and bake for 15-20 minutes, or until cheese is melted and meatball internal temperature is 145 – 160 degrees.

 

-While the sliders are baking, using the clean paring knife and clean cutting board, make the cucumber salad. Depending on the number of people you are serving, plan ½ cup sliced onion for each cucumber, assuming they are average size. If you prefer, peel the cucumbers with the vegetable peeler, then slice. I like to peel stripes for a nice presentation and added texture. Place cucumber slices and onion in the bowl.  In a liquid measuring cup, pour ½ cup of white vinegar, ½ cup water, 2 teaspoons of sugar, and 1 teaspoon table or Kosher salt. You can also use apple cider vinegar if you prefer a sweeter vinaigrette, and a pinch of dried dill or parsley. Toss and set aside to serve with the sliders.

 

Meal 2: MMMMMeatloaf Dinner – Sheet Pan Easy

Essentials: 2 Simply Done Gallon Storage Bags, 2 Sheet pans, Simply Done Aluminum Foil, 1 cutting board, 1 chef knife, small saucepan, wooden spoon, large tongs, meat thermometer

From the Pantry: PICS Olive Oil, Cayenne pepper or other favorite spice.

Food Safety Smart – Wash produce before preparing, leaving the skin on the sweet potatoes and leaving the green beans in the colander to dry.  Wash hands before and after handling raw meatloaf, even if you are using the plastic bag hack.

Directions:

-Preheat oven to 375 degrees.

-Prepare 2 large sheet pans with Simply Done Aluminum foil. Spray both pans with PICS Vegetable Oil.

-Hack – (optional) – using plastic bags as “gloves”, remove the Meatloaf Mix from the package and place it on one of the sheet pans. (You can also use bare hands, and wash again before touching other food or utensils.) Shape the meatloaf to a low, rounded loaf shape. Remove and discard the plastic bags. Wash hands again, and place the meatloaf pan in the oven, lower rack. Set a timer for 10 minutes.

-On the cutting board with the chef knife, cut the sweet potatoes into 4 lengthwise wedges each. Place them the second sheet pan on one end of the pan, skin side down, slightly apart. Lightly spray with PICS Vegetable Oil, and sprinkle with a pinch of cayenne or Cajun seasoning. When the set timer rings, open the oven, and place the second sheet pan on the upper rack. Set the timer for 10 minutes.

-Place the colander in the sink, or on a paper towel. Pour 2 TBSP of PICS Olive Oil over the green beans in the colander, tossing with the tongs to coat in the oil. Season with a sprinkle of garlic powder, if you like.

-When the timer goes off the second time, remove the upper rack sheet pan, spray again with vegetable oil, and spread the green beans on the empty side of that pan. Return the pan to the oven and set the timer for 10 more minutes.

-Combine beef gravy mix with approx. 1 cup of cold or boiling water, stirring vigorously with a whisk for 1 minute. Heat and simmer for another minute, stirring occasionally.

-When the timer goes off the third time, test the meatloaf with the thermometer. It should be about 158-160 degrees. Continue cooking until temp reads 160, 5 – 8 more minutes if needed. Remove the pan to the stove top. You can also check the tenderness and color of the sweet potatoes and green beans, removing them to a heat safe surface when the wedges are lightly browned, and the green beans are roasted and tender. Allow the meatloaf to rest for about 5 minutes before slicing. Divide the vegetables on 4 plates, along with sliced meatloaf. Add gravy as desired, and serve it up! MMMMMM……….

We are kicking off another month of value meals right to your inbox! We know you are knee-deep looking at recipes and ideas for your Big Game party food, so we’re sharing a couple of “pregame” ideas that will be quick and easy and keep your energy available for getting creative. This will keep your budget in good shape as well – these two winners serve 4 for $4!

Let’s take a closer look at this week’s meal items:

-1 lb Market 32 Hot or Sweet Italian Sausage

-4 Green Bell Peppers

-1 box PICS Instant White Rice, 14oz

-1 Yellow Onion

-1 jar Prego Pasta Sauce

-1 dozen PICS Grade A Jumbo Eggs

-1 bag PICS Burrito Tortilla, Flour, 10 inch

-1 can PICS Enchilada Sauce

-1 bag PICS Shredded Cheese of choice, 8oz

-1 can PICS Black Beans

First on the field is a fun twist on a traditional comfort food recipe – Sausage Stuffed Peppers! Make them sweet or hot, your call. You can also make them ahead and serve them up another day. You will need: 

-1 lb Market 32 Hot or Sweet Italian Sausage

-4 Green Bell Peppers

-1 box PICS Instant White Rice, 14oz

-1 Yellow Onion

-1 jar Prego Pasta Sauce

Kickoff!

Prepare rice according to package directions. Hack – cook double and freeze what you don’t need for a quick whole grain side or an easy add to soup.

Dice onion. Preheat oven to 350 degrees.

Split 1 lb. of sausage and discard casing. Brown sausage in a large skillet, breaking it up into smaller pieces as it cooks. Add diced onion to the skillet as sausage begins to brown. When sausage is cooked, drain fat and set aside.

Wash and dry peppers. Cut the tops off and remove seeds and membranes. Hack – speed cooking time by microwaving the peppers on high for 3 – 4 minutes. It is like blanching and will reduce overall cooking time.

Combine sausage and rice in the skillet. Add ¾ jar of pasta sauce, and additional seasonings if you like, such as a tsp of Italian herbs, or ½ tsp of granulated garlic. Combine all ingredients.

Prep a casserole dish large enough to hold 4 peppers upright with a light spray of vegetable oil. Place pepper cups in the dish, and spoon filling in, packing it down and allowing it to mound on top. Top with a Tbsp. or two of the remaining pasta sauce and put the top back on the peppers.

Bake for 30 minutes, until a meat thermometer reads 165 degrees. Make it your own with a sprinkle of Parmesan cheese or shredded mozzarella and a pinch of chopped parsley. Enjoy!

Next up are Breakfast for Dinner Enchilada Casserole! You will need:

-1 dozen PICS Grade A Jumbo Eggs

-1 bag PICS Burrito Tortilla, Flour, 10 inch

-1 can PICS Enchilada Sauce

-1 bag PICS Shredded Cheese of choice, 8oz

-1 can PICS Black Beans

Hey, imagine this – you’re kicking off your evening with the coolest twist ever: breakfast for dinner! We’re talking about a total flavor fiesta here with fluffy eggs, cheese that will melt in your mouth, and beans to keep you fuller longer! This comes together quickly and bakes up in 25 minutes. No rolling the enchiladas for this version – less fuss keeps saves you valuable time with this value recipe!

Spray a 9 X 11 inch casserole dish lightly with oil. Heat oven to 350 degrees.

Split sausage and discard casing. Crumble sausage into skillet and brown, breaking it up as it cooks. Remove cooked sausage and drain. Hack- wipe the skillet and reuse to cook the eggs. Spray lightly with vegetable oil. Return skillet to stove, and heat to cook scrambled eggs and beans.

Open, drain and rinse the black beans. Beat 8 eggs, then pour into the warming skillet. As egg begins to cook, add beans in and scramble until eggs are done.

Open Enchilada Sauce and pour some into the bottom of the casserole dish, coating the base. Lay flour tortillas along the bottom, then layer the egg and bean mixture, sausage, enchilada sauce and shredded cheese. Repeat for a second layer, ending with shredded cheese on top. Cover with foil and cook in the oven for 30 minutes. Remove the foil and cook 10 minutes more until cheese is bubbly and everyone is excited! Serve with sour cream. Enjoy!

Another year has just begun, and you may already be feeling the weight of cooking multiple nights a week. Fear not…navigating meal time just got a whole lot easier! This week’s flyer has many sale items that can provide quick, easy, and cost effective meals over the course of the week.  We took the work of going through the ad and built three meals around our Value pack of Market 32 Boneless Chicken Breast. Let’s take a look at three meal options below, with all ingredients right in the flyer!

The three meal options below were created with the idea of being able to feed four people per meal. In this case, each meal would feed all four people for under $4 a person. For a quicker look at the items we chose, check them out below!

Our Market 32 Chicken Breast can provide more than just one meal. Try cooking one or two large chicken breasts in a pan with the tomatoes, and they will melt right in your mouth! This will also provide added flavor to your chicken. Cook three to four packets of Ben’s Original Ready Rice for 90 seconds each, and your meal is complete!

Spring is a time for new beginnings. All around us, trees are blossoming, the birds are chirping, and life is getting more beautiful by the day. Another important aspect of spring that we like to honor is Earth Day. Even though the day has passed, we want to help you make Earth Day, everyday! Part of helping out our planet is by lessening, or eliminating food waste in the household. Did you know that over 100 billion pounds of food is wasted in the United States each year? Those numbers are nothing short of frightening. Luckily, we have ways to help you combat the fight against food waste. What better day to start than today, National “Stop Food Waste Day?”

  • Freeze/Store Leftovers: There are so many products that can be frozen. For example, if you bought too much meat this week, you can freeze it instead of throwing it away. Other items that can be put in the freezer include bread, fruit, vegetables, and more! If you do make too much one night, try storing it for your lunch or dinner the next day. 
  •  
  • Meal Plan: Set a day each week to sit down with your family and meal plan. For example, you could create a dinner outline to map out what the main course meal will be, what sides you plan to have, and any refreshments. Do this for each day of the week so that when you go to the grocery store, you already know what to buy and how much. 
  •  
  • Check expiration dates: How many times have you gone through your refrigerator, only to find an expired product that you completely forgot about? We’ve all been there. Regularly going through your refrigerator and pantry to check expiration dates is a huge step in the right direction! A helpful tip would be to locate items that are expiring soon and move them towards the front.
  •  
  • Make a meal from a meal: There are always options to use your leftovers to make another meal. Examples of this include soup, sandwiches, and salads. Check out our recipes website or our Price Chopper Ready website for delicious meal ideas that can be made from your initial meal.

Nothing is good for you if you don’t eat it – one of my favorite sayings, especially when there are debates about which foods are best for heart health. The basic tenets of a heart smart meal include lots of produce, lean proteins, healthy fats, and whole grains. The big opportunity? Making sure flavor is the reason everyone wants to eat these delicious, nutritious foods that bring heart healthful benefits to the table.

Flavor and taste are big factors in how we determine what we want to eat – we are drawn to foods that are described by their flavors, and often inspired to try new things when they are paired with foods and flavors we are already familiar with. Pairing familiar foods and flavors with something new or different is a great way to explore foods through flavors. Breakfast pizza, fish tacos, and avocado toast are all great examples of culinary and nutrition innovations. Seasoning and spices, as well as our inherent 5 tastes (sweet, salty, umami, bitter, sour) can inform food shopping and cooking routines into wonderful meals that are easy and affordable.

For heart health, salt and sodium are most important seasonings to understand and manage. It is easier than you think – once you have a few tips and hacks, you will be able to nudge flavor up and sodium down for almost any recipe.

Flavor Makers

There are so many ways to build flavor in food. Sodium is important, but Americans are overexposed. No other cuisine relies as heavily on salt and fat – internationally, spices, herbs, fermentation, and other methods are preferred. Sodium has many roles – it is a flavor enhancer and reduces the perception of bitterness. Sodium also tenderizes and retains moisture and is important to food safety and preservation.  Slowly, food companies are lowering sodium levels in foods. On food labels, low sodium in a single item is 140 mg or less; in a meal or soup item, per the American Heart Association, aim for 600 mg per serving or less. Public health goals range from 1500 mg to 2300 mg over the entire day. Perspective: most Americans get over 3400 mg sodium in a day; a teaspoon of salt equals 2300 mg of sodium.

    • Salt/Sodium-Free – Less than 5 milligrams of sodium per serving
    • Very Low Sodium – 35 milligrams or less per serving
    • Low Sodium – 140 milligrams or less per serving
    • Reduced Sodium – At least 25 percent less sodium per serving than the usual sodium level
    • Light in Sodium or Lightly Salted– At least 50 percent less sodium than the regular product 

    No-Salt-Added or Unsalted – No salt is added during processing – but these products may not be salt/sodium-free unless stated.

    Remember: Sodium levels vary in the same foods depending on the brand or restaurant.

Learn About Salt and Sodium

There are differences between salt and sodium, and a few myths about specific types of salt. Table salt is a combination of sodium and chloride, and the quantity of each may be higher or lower depending on the formulation.

Sea salt, Himalayan (pink) salt and other finishing salts all contain about 2300 mg per teaspoon. The different colors come from trace minerals (like copper in pink salt), but those minerals are not in any quantity that benefit health.

Some kosher salts, such as Diamond Crystal brand, are lower in sodium – the “fluffy” crystal shape allows the sodium flavor to remain high even though the actual content is lower, at 1120 mg per teaspoon.

Monosodium glutamate (MSG) is also returning to the plate as science is getting ahead of the myth that it is not a good choice. MSG meets 2 flavor-forward needs – it lowers sodium content (by up to 40%) and enhances savory flavors with its glutamate component. Glutamate is naturally found in protein foods like cheese, meat, and vegetables like mushrooms, and is made by the human body for critical brain and metabolic functions.

Salt Substitutes – These are used when sodium management is critical to health conditions. Please check with your health care providers before using, as they contain potassium, which may be restricted.

Build Flavor

Cooking methods such as grilling, sautéing, or roasting have their own impact on flavors, through caramelization. Those methods also help manage fat type/content if a rack is used while roasting meat or seafood.

Citrus flavors can substitute for sodium in many foods. Citrus makes our mouth water and brightens flavors when added just before eating. Add a squeeze of lemon or lime, or some orange zest instead of salt to freshen savory foods and leftovers. Fresh is great, but you can also try 100% juice items like orange juice (Dairy case), lemon or lime juice (found in our Produce section).

In the international aisle, lower sodium sauces, jarred and pickled vegetables and jarred (no added sugar) fruit spreads can also be used to create big flavor in small quantities. The secret is to use them near the end of cooking. A teaspoon of chopped roasted red pepper on a grilled protein, vegetable or fruit is a quick, colorful, and savory add that takes just a minute to prep. How about a cherry + thyme combo on a roast pork tenderloin, orange + chopped green olive on white fish, or bright apricot + cayenne on chicken? Jarred sofrito, usually in the international section, is a cooking sauce popular in many cuisines, and brings tomato, onion, peppers, and garlic together as a savory base – check labels for low sodium versions.

Savory/Umami flavors can be enhanced using low sodium concentrated tomato paste, a sprinkle of good parmigiana or Romano cheese, ground dried mushrooms (there are new spice products that include mushrooms, check sodium content/serving size and adjust as needed) and nutritional yeast, which has a parmigiana-like flavor, but a low sodium content for the 2 Tbsp serving size. Experiment with timing – like fresh herbs, these flavors are more robust when added near the end of preparation/cooking.

Sun dried tomatoes – jarred and bagged, in the international aisle and the Produce department. Check sodium, often they are very low.

Fresh and jarred salsas – in the Produce dept. and Dairy case (cheese section)

Flavored teas – experiment with poaching seafood, chicken, pork, and fruit (e.g., poached pears).

Herbs and Spices

Herbs and spices come in many forms, and their flavors take us around the world. Products that make it easy to boost flavor abound – here are a few options in our stores to try:

Fresh Herbs – Organic fresh herbs are the go-to at Price Chopper and Market 32. Find individual herbs and some blends already assembled for your culinary needs in the Produce section of the store.

The Gourmet Garden – squeeze garlic, spices, herbs, and blends are in the Produce department – find them by the fresh greens. Add them to recipes, or use them to finish dishes, like adding Italian herbs to a cooked chicken breast, or a rice dish before serving. Use the garlic as a base rub on roasted meat or vegetables – you can add other spices (like dried herbs) and they will adhere nicely to the dish while it cooks.

Salt-free dried herb blends are quick and easy – brand names include PICS, Mrs. Dash, and McCormick Salt-free Perfect Pinch, Weber Salt-Free Hamburger, Chicken and Steak seasoning.

Tip – Look for small plastic packages of new flavors – easy to buy and try for just $1 or $2.

Tip – Dried herbs should be replaced after 1 year – they do not “go bad”, but they lose flavor and quality over time. Purchasing smaller quantities more often ensures the best flavor profile.

Fresh ginger, garlic, turmeric, scallions, cilantro, and a variety of organic, fresh packaged herbs including rosemary, chives, and basil are easy to find in many food stores.

Tip – Fresh herbs lend their flavors best to dishes when they are added at the end of cooking, for 10 minutes or less. If recipes call for herbs to be added before cooking, dried are the better and more economic choice.

Tip – Freeze leftover roots as is, chop herbs and freeze in ice cube trays. No salt added tomato paste leftovers can be placed into a plastic bag, (shape into a cylinder), frozen, then sliced and used to enhance flavors of soups and sauces.

 When creating richer flavors is easy, it happens more often. The right kitchen tools can help you take your taste buds to new heights with little effort. Check out the list below and find many in the kitchenware section of the store!

Coffee grinder, good knives, knife sharpener, garlic press, small manual spring chopper, 4-sided grater, digital kitchen scale, measuring cups (liquid and dry ingredient)/spoons, microplane/zester, citrus press, multi-blade manual chopper, mortar and pestle, herb grinder, apple/pear/mango slicers, veggie storage containers (e.g. avocado or onion keepers), cruet or small jars with covers for salad dressings, veggie chopper or mandolin, spiralizer, food processor, bullet-blender. Snap top plastic/glass tempered glass containers – different sizes, freezer to oven. Instant pot, rice cooker, large and small roasting pans, sheet pans (great for roasting vegetables), colander, salad spinner, microwave/stove stop steamers.
